Four meals this week from one pork butt I bought and slow cooked in the crockpot. Pulled the pork once it rested a few minutes and was able to make the original pulled pork dinner with roasted potatoes and oven baked beans.
Next I made Friday night pork nachos which were amazing! Layering tortilla chips, grated cheese, another layer of chips, more cheese, and then topped with the pulled pork, a little more cheese, then drizzled ranch dressing and BBQ sauce and jalapeño peppers!
Today I made BBQ sandwiches with homemade slaw and fries on the side.
Finally, for dinner tonight I have taken the broth from when I originally cooked the pork butt, added some chicken stock, and chopped potatoes, carrots, onions, and celery. Next added 2 cans of petite diced tomatoes, 1 can southwestern corn, and 2 Bay leaves. Lastly I seasoned with pepper and a little sugar to bring out the flavor of the fresh vegetables.
All of these four meals came from a $10 pork butt, not bad for enough meat for four meals!!
