Chicken Pasta is one of my family's favorite dishes that I have been making for years!

 


First I chop up various fresh veggies, I usually use yellow squash, zucchini, onion, mushrooms(fresh or canned). Next I add a can of drained petite diced tomatoes 🍅 and I like to add sliced black olives. After chopping the veggies, I place them on a large roasting pan, add the canned tomatoes and sliced black olives, then I season with freshly ground black pepper and kosher salt and drizzle olive oil generously on top and gently toss to coat all the veggies with oil and seasonings. 


At this point I place the veggies in a 425° oven and roast for 25 minutes, I usually stir at least once during this time. While the veggies are roasting I cook my pasta( rotini) per directions on box and saute my chicken. Once chicken is sautéed I chop into bite size pieces. When veggies are done, I layer pasta first in a large bowl, then roasted vegetables, and then chicken on top. I pour bottled Italian dressing over top and toss to mix all together. 



I like to serve with fresh bread 🍞 and a little grated Parmigiano cheese 🧀 so yummy and makes great leftovers for lunch! I love the leftovers warm or cold. Hope you try this and love it as much as my family does!! ENJOY 😋
